Dear Colorado Wine Club Member, February is, for most wineries, a great time to reflect, plan and relax. Not so at Talon Winery, where we are busily making ready for the traffic season here in the Grand Valley. We’re getting comfortable with our new digs in Palisade as we get wines ready for bottling, change the gift offerings, clean and learn all we can about the place. Keep your ears on for invitations to come and help bottle, as this is a top priority in the coming months. Enclosed are your Wine Club bottles. This month’s wines for the Dry Colorado Wine Club are: 2005 Chardonnay, Plum Creek Cellars This wine has good varietal character, a well-balanced oak component, and a nice long finish. It shows promise for a few years, but don’t wait too long. Its best deployment is with fish, poultry and/or pasta with butter or cream sauce. Sure, throw in some garlic and capers if you like, along with cracked peppercorns. Just make sure you don’t forget to chill the wine a bit. White wine season is just around the corner. 2005 Cabernet Franc, Canyon Wind Cellars This wine won a silver medal at the Pacific Rim International competition. It’s a Cab Franc you can really sink you’re teeth into. It’s got good tannic structure, and a dry backbone, with medium weight and body. Aromas of spice, blueberries and vanilla are joined by cranberries on the palate. Pairing suggestions include lamb, pork and veal. As always, enjoy the wines in good health! Sincerely,
