Colorado Wine Room's Latest NewsForks and Corks Jr Last month's Wine Lover's Dessert Night went so well, we thought we'd bring out Diana from DMT Catering again, this time for an assortment of heavy hors d'ouvres that will please everyone from vegetarians to meat lovers. We'll have more details in a separate announcement, but be assured you will learn a thing or two about food and wine, and hopefully have a nice time while we're at it. It's Saturday, March 31st from 7 pm - 9 pm, here at the Colorado Wine Room. Wine Club members pay $33, non-members pay $38. Last time we nearly sold out, so don't wait to sign up. Call us at 858-6330. Pre-registration with payment required. Why the "Forks and Corks Jr"? Last fall we did a 7 course sit down dinner with DMT that we dubbed Forks and Corks. This will be a more casual version with plenty of opportunity to meet new people and sample a variety of delicious fare. Matt Cookson has been making wine for 25 years. He graduated from Fresno State University in 1984 with a degree in Enology, the study of winemaking. Most of his winemaking years were spent in California, but he's been involved in Colorado winemaking since 1988. He also made wine in the Finger Lakes Region of New York for 6 years. Matt is partner and winemaker for The Winery at Holy Cross Abbey in Cañon City, 30 miles west of Pueblo in southeastern Colorado. Matt's favorite part of winemaking is getting a great wine safely in the bottle. A close second favorite is enjoying a cold beer at the end of a long day of crushing grapes. Apparently, Matt is firm believer in the old adage that it takes a lot of good beer to make good wine. He's not crazy about the bottling itself, nor the federal and state reporting and tax paperwork that is required of wineries, but overall he loves his work. What we've noticed about Matt is his clear vision, and his skill as a winemaker. Matt consistently produces quality wines ranging from robust reds to delicate sweet wines. We've carried numerous wines from "The Abbey" since we opened in April of '05. We've been particularly impressed with his Riesling. It's a sweet wine with wonderful balance and complexity. Smooth mouthfeel with notes of pineapple and mandarin orange make this the ultimate warm weather sipping wine. We sold out of it in December and are happy to report it's back in stock.
