Dear Colorado Wine Club Member,

 

The Christmas season is upon us as our 115 gallons of Talon Viognier continues to cold stabilize and clarify in the tank.  We also continue to improve the heat exchange system engineered  by yours truly.  I’m currently working out a system of trickling the glycol down the ice cold walls of the freezer to better chill the wine both during and after fermentation.

 

Our Christmas wish for you is that you gather family and friends ‘round the dinner table and enjoy their company with good food and good wine - the pleasures of our earthly existence. 

 

Enclosed are your November Wine Club wines.  This month’s wines for the Dry Colorado Wine Club are:

 

Hermosa Vineyards 2003 Syrah

Once again we rely on Ken Dunn’s Hermosa Vineyards for one of our selections this month.  The ’03 Syrah is not on our tasting lineup, but is fraught with fruit flavor, lots of character, yet nicely rounded.  Great for cold weather and hot food.  Try it with a hearty crock pot that includes beef tips, rutabaga, parsnips, carrots, onions, and potatoes, salt and a healthy dose of fresh ground black pepper.

 

 

Sutcliffe Vineyards 2003 Cabernet Franc-Syrah

The Cab Franc – Syrah is an non-traditional blend, since the two grapes come from different parts of France.  Cabernet Franc is a Bordeaux variety, while Syrah is the leading red grape in the Rhone valley, especially the northern part where it is the only red grape allowed to be used in wines of that appellation.
